While I highly recommend following the original recipe for the best flavor, I understand that sometimes we find ourselves missing key ingredients. So here’s a handy list of substitutes you can use:

  • Cacao: swap it out for milk chocolate
  • Eggs: whipped cream
  • Mascarpone: cream cheese
  • Rum: brandy, coffee liqueur, Marsala wine, or omit it altogether for a delicious alcohol-free tiramisu.

Tips for making a delicious tiramisu cups

While tiramisu is an easy dessert to make, there are a few tips to ensure that it turns out perfectly every time:

  1. Use high-quality mascarpone cheese for a smooth texture and rich taste.
  2. Don’t soak the ladyfingers for too long in the espresso. Quickly dip each side of the ladyfingers in coffee to avoid a soggy texture.
  3. Use freshly made espresso from an espresso machine or Moka pot instead of instant coffee.
  4. Switch up the layers by criss-crossing the ladyfingers for a more stable tiramisu.
  5. Use crème brulée cups for tiramisu.

Storing

Storing: Tiramisu cups can be stored in the refrigerator for up to 2-3 days. To store it, cover it with plastic wrap or aluminum foil and keep it in the refrigerator.
Freezing: not recommended as it won’t taste good.

Equipment

  • 9 crème brulée cups (~200ml)

Ingredients
  

  • 6 eggs
  • 70 g white sugar (for egg yolk)
  • 60 g white sugar (for egg white)
  • Pinch of salt
  • 0.5 tsp vanilla sugar
  • 30-50g cacao powder
  • 500 g mascarpone cheese
  • 500 g ladyfinger biscuits
  • 7 espresso shots
  • 2 tbsp dark Rum/Brandy

Instructions
 

  • Prepare the espresso, add rum to it, and mix it (it's best to pour it into a bowl). Allow it to cool down.
  • Separate the egg yolks from the whites.
  • In one bowl, whisk the egg whites with 60g of sugar and a pinch of salt until they form stiff peaks. Place this mixture in the fridge.
  • In another bowl, whisk the egg yolks with 70g of sugar and vanilla until they become a light color. Then, using a spatula, gently fold in the mascarpone cheese in a clockwise motion.
  • Add the whipped egg whites to the mascarpone mixture and gently fold them in again in a clockwise direction.
  • Prepare cups in which you will assemble the tiramisu. Begin by spreading a layer of the mascarpone mixture on the bottom of the cup. Then, start layering by quickly dipping each ladyfinger biscuit into the coffee mixture and placing them evenly on the cup's bottom. Add a layer of mascarpone mixture on top, spread it evenly, and sprinkle with cocoa. Repeat this process: ladyfingers soaked in coffee, mascarpone, and cocoa. Usually, 2-3 layers are enough, depending on the cup sizes.
  • You can sprinkle cocoa on the top layer (or do it just before serving), cover the tray with plastic wrap, and refrigerate it for at least 4 hours, preferably overnight.
