Creamy chicken fajita pasta is one of my favorite dishes to bring to the office. This chicken fajita pasta recipe will stay creamy even after reheating it the next day, making it perfect for meal prepping. For this recipe, I like to use whole-grain pasta for added nutrition, but you can choose any pasta type you prefer. This chicken fajita pasta recipe is very easy to make and doesn’t require much equipment, so there won’t be a lot of dishwashing afterward.

Missing some ingredients for the chicken fajita pasta recipe? You can easily swap out some ingredients to suit your taste or what you have on hand:

  • Red bell pepper: If you don’t have red bell peppers on hand, you can use orange or yellow bell peppers instead.
  • Maggi Idea sauce: If you can’t find Maggi Idea sauce, feel free to use any other sauce thickener you prefer. Alternatively, substitute it with double the amount of Hochland cream cheese and double the amount of hard cheese to achieve creamy, thicker texture.

Storing and reheating

Storing: Store your chicken fajita pasta in an airtight container in the fridge for up to 3 days.
Reheating in the pan: Reheat the pasta in a pan with a splash of water for about 10-15 minutes on low heat with the lid on. This method helps retain the dish’s creamy texture.
Reheating in the microwave: Microwave the pasta for about 2 minutes. Stir halfway through to ensure even heating.
Reheating in the air fryer: Reheat at 160°C (320°F) for up to 7 minutes. For extra moisture, add some cheese on top before reheating to prevent the pasta from drying out.
Reheating in the oven: Preheat the oven to 160°C (320°F) and reheat for 8-10 minutes. You can add cheese on top or cover the dish with foil to keep the pasta from drying out.
Freezing: You can freeze this chicken fajita pasta in an airtight container for up to 1 month. However, it is always best to enjoy this pasta fresh for the best flavor.

Ingredients
  

  • 200 g chicken
  • ½ onion
  • 3 garlic cloves
  • ½ red bell pepper
  • 90 g Hochland Cream Cheese 15%
  • 250 ml light cream (10%)
  • 190 g pasta
  • 1 tsp olive oil
  • 2.5 tbsp fajita species
  • ½ tsp salt
  • ½ tsp black pepper
  • 40 g grated hard cheese (can be grana padano or Dziugas)
  • 15 g MAGGI IDEA spices sauce for chicken in cream and herbs
  • 200 ml pasta water

Instructions
 

  • Cut the chicken into 1 cm cubes. Season the chicken with 2 tbsp of fajita seasoning and let it marinate for at least 30 minutes, or overnight for deeper flavor.
  • Boil a large pot of water over high heat. Once boiling, add 0.5 tsp of salt and the pasta. Cook the pasta according to the package instructions.
  • While the pasta is cooking, chop the onions finely and cut the bell pepper into small cubes. Heat a pan to slightly above medium heat and add a drizzle of olive oil. Add the chopped onion and sauté for 3-5 minutes until it becomes slightly brown and fragrant.
  • Add the chopped bell pepper to the pan and cook for about 5 minutes, stirring occasionally, until the pepper softens.
  • Add the marinated chicken to the pan and cook for about 5-7 minutes, stirring occasionally, until the chicken is lightly browned and cooked through.
  • Add the chopped garlic to the pan with the chicken and vegetables, and cook for about 1 minute until fragrant.
  • Add the cream cheese to the pan, followed by pasta water. Mix well to create a smooth sauce. Then, pour in the light cream and stir again until well combined. Cook the sauce for about 3-4 minutes.
  • When the first bubbles appear in the sauce, add the remaining 0.5 tbsp of fajita seasoning and grated cheese. Mix well to melt the cheese into the sauce. Then, add the Maggi spices and cook for about 3 more minutes, or until the sauce thickens to your desired consistency.
  • Add the cooked pasta to the pan and mix well to coat the pasta evenly with the sauce.
  • Serve the pasta on a plate, sprinkling additional cheese on top and adding chili (optional).
