Bell Pepper Salad with Feta

Refreshing and easy vegetable salad. I highly recommend using walnut oil as it’s soft taste is perfect as salad dressing. You can take out the feta and serve this salad together with Chicken Kebabs!

INGREDIENTS

  • ½ red bell pepper
  • ½ yellow bell pepper
  • 1 medium sized cucumber
  • 10 cherry tomatoes
  • 70g feta cheese
  • Half of red onion
  • Fresh dill
  • A bit of walnut oil
  • A bit of sea salt

INSTRUCTIONS

  1. Cut vegetables: bell pepper into 1 cm cubes, cucumber – slice horizontally into 2-3 mm slices, then cut in half, cherry tomatoes – cut in half, onion – cut in half and slice lengthwise. Place cut vegetables in a bowl and mix well.
  2. Wash the dill and chop it into small pieces. Add it to the bowl with vegetables, pour a bit of walnut oil, add salt and mix.
  3. Cut feta into 1cm cubes and place it on the salad.
